Wednesday Weekend Update!

This past weekend, we headed up to Lake Moultrie for some sailing. It was absolutely perfect weather, mid-80's and low humidity. S had to teach the practical portion of the Navy sailing course in the morning then him and I took the Ranger out by ourselves in the afternoon. It was a great day full of sun (maybe a little too much though, should've worn sunscreen) and sailing :) Here are some pics from our day.

We headed home from the lake, which is about 45 min. away, so S decided to bring me through the base to see "Charlie", this massive gator that lives in a fenced in area. I didn't get any pictures of Charlie, but I did get a shot of this smaller gator. There was a teenie little baby swimming around this one, but you can't see it in the picture.


For those of you who live in the South or Southeast, you would know that Hurricane Isaac is making it's way through our area. It didn't even really come close to hitting Charleston, however, we did get quite a bit of rain yesterday which caused some bad flooding downtown. Fun fact - downtown Charleston was built BELOW sea level so everytime we get some bad rain, it floods. I don't know who's brilliant idea that was! Here are some pics that peeps were posting of downtown yesterday. And yes, those are people kayaking through the Market.

 
 

This really is just kind of disgusting considering how dirty those streets probably are. I hope those two took a good shower afterward!
 
We are headed to the NC mountains for the holiday weekend to spend time with S's family. What do y'all have planned for Labor Day???

Tuesday Update!

I'm soo excited because my friend Kim and her boyfriend Brandon are coming down to visit tonight and tomorrow! Kim's fam vacay's in Myrtle Beach every year and since that is just a couple hours away, they have decided to take some time and come down to Charleston to visit. I've only had two friends come down to visit me since I moved over a year and a half ago, so needless to say, I am super excited!

I was actually really digging my curly hair this day. It can be so unruly that I used to hate it so much. Luckily it can make getting ready in the morning a lot faster. By adding a little spray gel, add a little heat and humidity, bam! 2 minute syle.


Got some quality time in at Folly. My friend Christian's parents were down visiting from CT and they rented the same beach house that they rented last year. It's so cute, I love it!

After the beach, we went to Taco Boy, one of our fav places to eat.

This is another one of my extra appearances on Army Wives :D I actually got some face time in this episode. It is Season 6, Episode 16 I believe.

I've been on a HUGE fruit kick lately and the selection at Publix has been awesome.


I also recently started volunteering at Fleet & Family on the Naval Weapons Station here in Charleston.


I emailed Kim a list of restaurants that we like to eat at here in Charleston so she could take a look at the menus/prices. She said that she would leave it up to us where we went for dinner since we know our way around all the local places. So far the choices are Magnolia, Blossom, 82 Queen, Coast, Poogan's Porch, and Amen Street. I will be sure to let y'all know where we end up choosing and I'll post my review. I've actually been to all these places already and some of them are kind of touristy, but they still have great food and capture that Southern Hospitality.

Over the weekend, we had the opportunity to go to the PGA Championship, which was being held at the Ocean Course at Kiawah Island about 45 min. from our house. Even though the championship was sold out, they were still giving out free tickets for active duty military AND their spouses! S is all about golf and I love to play myself so this was a great opportunity for the both of us.

It was beyond hot, but luckily there was a slight ocean breeze since the course is right on the water. We drank tons of water and only lasted about 4-5 hours before we were spent and ready to go home!


Have any of y'all ever done this race or one similar??




I am dying to do it!! They are holding the Color Run 5K in Charlotte on my birthday in November, however, it is already SOLD OUT! This looks like the next best thing and is in Columbia, which is only about an hour away.

I would love to hear about your experience if you've done it before!!

Turkey Sausage and Parmesan Frittata recipe

Hey Y'all!

So I decided to do a quick post about the turkey sausage frittata that I have been obsessing over lately. Not only is it healthy, but it is high in protein and is a great all-in-one for breakfast, lunch, OR dinner! S loves it and it always makes the girls at work's mouth water when I bring it in to work for breakfast or lunch. I actually just typed up the recipe for one of them so I decided to post it here as well.

Turkey Sausage and Parmesan Frittata


8 eggs (you can also do 5 whole eggs and 3 egg whites or 4:4, etc. if you want)
1/4 - 1/2 cup milk
1/4 - 1/2 yellow onion, chopped
1-2 tsp minced garlic
2 handfuls of baby spinach with stems cut off
1 package of Jimmy Dean turkey sausage crumbles
3-4 Tbsp Bisquick
½ cup shredded parmesan cheese (and a little extra to sprinkle on top before you put it in the oven)
Cooking Spray
 
 
 
Preheat oven to 350F. Beat eggs, milk, and Bisquick together in a large mixing bowl. Sauté onions and garlic in a couple teaspoons of olive oil until softened and slightly transparent. Add onions and garlic to egg mixture. Spray pan with cooking spray and add turkey sausage crumbles, cook on medium heat until browned then add to egg mixture. Chop stems off spinach and add to egg mixture along with the parmesan cheese. Spray then pour egg mixture into a large casserole dish or baking dish. Bake at 350F for about 25-30 minutes or until slightly browned on top. I would check it around 20 minutes to determine how much longer you think it needs to cook since all ovens are different. I also put estimates for most ingredients so you can adjust them to what you like. Enjoy! J

Depending on what you like, you can substitute or add ingredients such as peppers, tomatoes, potatoes, mushrooms, etc. Pretty much anything you would put in an omelet, you can put in a frittata!
