Wednesday Walkabout and some recent kitchen adventures..

Started this post yesterday, but didn't get a chance to finish until now...

Happy hump day! Hang in there yall, it's almost the weekend!

I was supposed to start working out with my trainer this past Monday, but my little mishap at the beach (cut-open hand) prevented me from being able to do any heavy lifting. I am meeting with him tonight to do my measurements, etc. and go over nutrition and diet, I'm really excited! I think I have a pretty good handle on eating healthy, but it will be great to hear what he thinks will work for me.

Speaking of eating, I recently mentioned trying out a couple new recipes, but there are also a couple that I'm really digging that I haven't mentioned...

A few weeks ago, S and I had some friends over for Sunday Funday and to watch some football so I decided I was going to make pulled bbq chicken. Of course there are a million recipes on Pinterest, etc., but once I got to the store, I started feeling a little overwhelmed by it all and decided on something semi-homemade. I went with the McCormick's Southern BBQ Ribs seasoning packet and it.was.awesome.

I used one package of bonesless, skinless chicken breast and one package of boneless, skinless thighs.

All I had to do was add some ketchup and honey, mix it up and stick it all in the crockpot for four hours. It calls for 1/2 cup of honey, however, I didn't have that much on hand so I used probably closer to 1/4 cup. After making it a second time with the required amount of honey, I would recommend going back and only using 1/4 cup. I liked it a little less sweet and it has a good kick to it.

Since I had such great success with that seasoning, I decided to try another one!

Not bad, however, I did mess up a little in that I cooked it at 425 degrees instead of 400, oops! I was a little overdone, but still edible. I would definitely make it again.


Since I already had the oven going that night, I decided to throw together some Apple Bran Muffins. You can find the recipe here. They came out pretty good and they are only about 85 calories per muffin. No butter or oil, just buttermilk and egg whites. I would probably give this one 3 stars out of 5. I have a better apple muffin recipe somewhere at home, I just have to find it!

Last night, I tried a recipe for Tuscan Chicken Soup. Another awesome one that I will definitely add to the rotation. It was fairly easy. The recipe calls for rotisserie chicken, but I just cooked some chicken breast in the crockpot a couple days beforehand and it worked out more than perfect. This is definitely one of my faves so far.

While I would love to slave over the the stove all day and cook my sailor delicious homemade meals everyday, semi-homemade just makes my life a little bit easier. I'm always looking for good recipes that take 30 minutes or less to make because working full-time + puppy + a million other things to do does not equal enough time to make things from scratch. Do yall have any great recipes that you made recently that you would suggest??

I hope you like the pumpkin cake, it's SO easy and ends up being delicious! Make sure you have vanilla ice cream on hand though! :)
