Cuppie Cakes!

For Valentine's Day, I decided to make some delicious cuppie cakes for my co-workers.

Sidenote: I used to bake alllll the time during my single days, cuppie cakes and other yummy recipes from scratch, straight from my Magnolia Bakery cookbook. I vow to resume my baking habits just as soon as I have a suitable kitchen (enough counter space) to use my stand-up Kitchen Aid mixer on a regular basis.

Until that happens, I decided to go with a semi-homemade approach for this recipe.

 "Neopolitan" Cupcakes

Ingredients:
1 box cake mix (you can use any kind you want, I used Funfetti)
3 egg whites
1 1/4 c water
1/3 c canola oil
  
1 box brownie mix (I used Duncan Hines Chewy Fudge Brownies)
2 eggs
1/4 c water
3/4 cup canola oil


Directions: 
Preheat oven to 350 degrees. 

 In a mixing bowl, whisk together cake mix, eggs, oil, and water; following the recipe on the box. In a seperate bow, whisk together the brownie mix, eggs, oil, and water; following the recipe on the box. Spoon the brownie batter into prepared muffin cups, filling each cup 1/3 full. Spoon the cake batter over the brownie batter, until muffin cups are each 2/3 full.

Bake in the preheated oven until golden brown and the tops spring back when lightly pressed, about 20 minutes.


 I loved that I found Valentine's Day themed Funfetti cake mix, but you can use any kind of cake mix or just use the white mix like the recipe states. I also went with the Valentine's Day themed Funfetti frosting, which I thought added a cute touch.

Have you ever heard him read some of those "Hey girl" things? He can't make it through them without laughing.. it's great! Those cupcakes look delicious.. I've been dying to try making them myself.

hahaha oh my god Ryan Gossling 'hey girl' are my favorite!

I'm also drooling over those cupcakes! My easter baking list is going to be insane :)
