Since I'm still trying to get my act together and get those vacation pictures uploaded to my computer, I thought I would share a recipe that I made for everyone on our first night in NC. S's family is from Kentucky and since they don't live near the shore, they asked us to bring some fresh shrimp up to the cabin. That we did, four pounds of it!
Lowcountry Boil
4 pounds small red potatoes
5 quarts water
1 (3-ounce) bag of crab boil seasoning (I used Zatarain's)
4 tablespoons Old Bay seasoning (I added a little more to taste)
2 pounds kielbasa or hot smoked link sausage, cut into 1½-inch pieces (I used Johnsonville Andouille)
6 ears of corn, halved
4 pounds large fresh shrimp, peeled and deveined optional
Cocktail sauce
Directions:
Add potatoes to large pot, then add 5 quarts water and seasonings.
Cover pot and heat to a rolling boil; cook 5 minutes. Add sausage and corn, and return to a boil. Cook 10 minutes or until potatoes are tender.
Add shrimp to stockpot; cook 3 to 4 minutes or until shrimp turn pink. Drain. Serve with cocktail sauce. Serves 12.
This is a great, easy recipe for a summer cookout and it's a lot of food that will feed a lot of people. Enjoy!

We have this every year for Thanksgiving and Christmas at my grandparents. It's seriously the easiest meal for lots of people.
Ooh low country boil is so delicious! We have it every time our family gets together on the beach! :)
